Sweet potato, cut into lengthwise sticks, fry for 20-25 minutes over medium heat. If the sweet potato is chopped coarsely, after frying, additionally stew the sweet potato under the lid with the addition of a quarter cup of water. Fry the boiled sweet potato for 5-7 minutes until golden brown.
How to fry sweet potatoes
1. Wash the sweet potato, cut off the peel with a sharp knife or potato peeler.
2. Wash the peeled sweet potato again in cold water.
3. Cut the sweet potato into strips about three centimeters long, 1 centimeter wide.
4. Peel the onion from the husk, cut into small squares.
5. Place a dry frying pan on the stove, turn on medium heat, wait half a minute.
6. Pour any vegetable oil (sunflower, olive or corn) into the pan – a couple of tablespoons.
7. Put onion in a pan with oil; fry it for a few minutes without covering with a lid.
8. Put sweet potato to the fried onion, fry, sometimes stirring with a wooden spoon, for 10-15 minutes.
9. Cover the pan tightly with a lid, change the fire to a quiet one, leave the sweet potato to fry for 10-15 minutes.
10. If desired, salt the sweet potato, mix, remove from the burner.
Sweet potato fritters
Fresh sweet potato – 600 grams
Egg – 3 pieces
with a fat content of 33% – 330 milliliters Flour – 150 grams (5 heaped tablespoons)
Vegetable oil – 30 milliliters
Baking powder or soda – 10 grams
Salt – half a teaspoon
Powdered sugar – 1 pack 80-100 grams
How to make sweet potato pancakes
1. Wash the sweet potato, peel it with a sharp knife.
2. Grate the sweet potato with large straws.
3. Combine flour, eggs, baking powder or soda slaked with citric acid, vinegar or boiling water in a cup, salt, pour in cold cream, mix.
4. Put the grated sweet potato into the bowl with the creamy mass, mix well with a spoon or hands, set aside for 10 minutes.
5. Place the pan over medium heat, pour in the oil, heat the pan for a few minutes until the oil begins to bubble.
6. Put the pancakes in a frying pan with a tablespoon so that they do not touch each other, fry on each side for 5 minutes.
7. Serve sweet potato fritters sprinkled with powdered sugar.
