How to brew classic Kalmyk tea
Products
Kalmyk tea-brick (can be replaced with a mixture of black and green tea) – 3 tablespoons
Milk (preferably homemade) – 1 liter
Butter – 1 cube (to taste)
Water – 1 liter
White or black ground pepper – a pinch
Nutmeg – a pinch
Bay leaf – 1 leaf
Salt – a pinch
How to brew classic Kalmyk tea
1. Pour a liter of water into a saucepan.
2. Cut off Kalmyk tea, divide slightly, boil over medium heat.
3. Pour pepper, nutmeg, bay leaf, a pinch of salt into boiling tea.
4. Constantly stirring, pour milk in a thin stream, let the tea boil again, reduce the heat to a slow one.
5. Saturate the tea with oxygen – scoop tea from the bottom of the pot with a ladle, raise the ladle with tea to a height of about 10 centimeters, pour the tea from the ladle into the pan in a thin stream, repeat the procedure 20-30 times.
6. Remove tea from the burner, strain through a strainer if desired.
7. Serve Kalmyk tea hot.

How to brew sweet Kalmyk tea
1. Pour a liter of water into a saucepan.
2. Pour black and green tea into the water in a saucepan, boil over medium heat.
3. Put salt, sugar into boiling tea, stir for a minute to dissolve them.
4. Constantly stirring, pour milk in a thin stream, let the tea boil again, immediately remove from the burner – do not boil tea after adding milk.
5. Put a piece of butter in tea, dissolve it, stirring.
6. If desired, strain the tea through a strainer.
7. Serve tea immediately hot, until the fat has solidified on top.
