Preparing tench for frying
We take a basin with cold water, add a little lemon juice, put tench there and soak for several hours.

Gently remove the scales from the tail of the tench to the head with a knife or use a metal sponge for this.

Ways to fry tench
Simple frying tench. We cut the fish, marinate and fry it on both sides for 3-5 minutes. in a frying pan with sunflower oil.
Roast tench in sour cream. We cut the fish, marinate it in a pan and stew it in sour cream sauce for 20-30 minutes.
Tench in batter. We cut the fish, roll in flour, then in a beaten egg, fry in a pan for 3-5 minutes on both sides.
If you do not remove the scales from the tench or add a little sugar to the marinade, then the tench after frying will have a delicious crispy crust.
