How to cook soft caramel
1. Pour half a glass of milk into a small saucepan and heat to a boil.

5. In small portions, pour hot milk into a saucepan with melted sugar while stirring constantly.
6. Put the saucepan with the milk-sugar mixture on a very small fire (the caramel should languish, not boil), stir constantly.
7. Add half a teaspoon of vanilla sugar, salt on the tip of a knife and mix again.
8. Remove the stewpan with caramel from the heat.
9. Add butter, mix soft caramel until smooth.
10. Transfer soft caramel to bowls and refrigerate.

Serve soft caramel with pastries, fruit, whipped cream or as a dessert on its own.

– If the coating on the inside of the saucepan is dark, a trickle dripping from a spoon will help determine the color of the melted sugar.
